Domaine Jean-Marc Boillot (often labelled J. M. Boillot) is a leading Côte de Beaune address with roots in Puligny-Montrachet. Founded in the mid-1980s after Jean-Marc left his family estate to chart his own path, the domaine drew on parcels inherited from both sides of the family and has grown steadily through long-term contracts and a small négociant arm. The cellars are run in a classical, detail-driven style aimed at purity, balance and clear vineyard expression rather than flash.
The heart of the range is white Burgundy from Puligny-Montrachet, Chassagne-Montrachet and Meursault, complemented by selected reds from Volnay, Pommard and Beaune. Viticulture focuses on careful canopy work, low yields and hand harvesting by parcel. In the cellar the whites are pressed gently, fermented and raised in French oak with new barrels used judiciously; lees work is calibrated to build mid-palate without blurring line. Reds are mostly destemmed, fermented in small vats with restrained extraction, then matured in oak chosen to refine, not dominate.
House style for the whites is precise yet generous: citrus and white-peach fruit, chalk-lined freshness and a touch of almond or brioche from élevage, all kept taut by vibrant acidity. Premier cru bottlings from Puligny and Chassagne show extra depth and length while retaining a cool, stony core. The reds read as silken and perfumed—red cherry, rose and subtle spice over fine, well-meshed tannins—with Volnay leaning more floral and Pommard bringing a little more grip and earth.
Cellaring depends on cuvée and vintage. Village-level whites typically drink well from release and improve over three to six years; premier crus reward five to eight (and longer in top seasons). Reds are approachable within three to five years, gaining savoury complexity and silk for a decade or more in stronger vintages. Across the board, J. M. Boillot remains a reliable source for classic, finely balanced Côte de Beaune wines that foreground site and elegance.
