Paolo Scavino

Paolo Scavino is one of Barolo’s most dynamic and respected producers, a family estate that has been shaping the identity of the region for over a century. Founded in 1921 in Castiglione Falletto by Lorenzo Scavino and his son Paolo, the winery has grown from humble roots into an internationally acclaimed benchmark for Nebbiolo, combining deep respect for tradition with a forward-looking pursuit of precision. The modern chapter of the estate is led by Enrico Scavino, who took charge in the early 1980s. With his daughters Enrica and Elisa now fully involved, the estate remains very much a family affair. Enrico’s vision was bold for its time: he pursued greater clarity and refinement in Barolo, reducing harsh tannins through careful vineyard management and more precise vinification. His work helped usher in a new era for the region, bridging traditional and modern styles. The Scavino family farms about 30 hectares across 20 crus in Barolo, with vineyards in some of the appellation’s greatest sites, including Cannubi, Bric dël Fiasc, Monvigliero, and Rocche dell’Annunziata. This remarkable range of terroirs allows them to produce a suite of single-vineyard Barolos, each with its own personality, alongside a classic Barolo that blends fruit from across the estate. Viticulture is meticulous and sustainable, with a focus on low yields and precise work in the vineyard to achieve optimal ripeness and balance. In the cellar, the philosophy is one of cleanliness and precision: stainless steel fermenters, careful macerations, and élevage in both traditional large Slavonian oak botti and small French barriques, depending on the wine and vintage. This mix allows for power without rusticity and finesse without losing character. The portfolio includes not only world-class Barolo but also fine expressions of Dolcetto, Barbera, and Langhe Nebbiolo. Yet it is the Barolos — especially the single-vineyard bottlings such as Cannubi, Monvigliero, and the legendary Bric dël Fiasc — that have cemented Paolo Scavino’s reputation among the very top estates of Piedmont. Today, Paolo Scavino represents the perfect balance of heritage and innovation: a family-run estate with a century of history, producing Barolos that combine site expression, precision, and age-worthy depth.
