Pascal & Laurent Borgeot “Puligny-Montrachet Vieilles Vignes” — Limestone Clarity, Old-Vine Depth

Drawn from mature Chardonnay parcels in Puligny-Montrachet, this cuvée captures the village’s trademark precision with the extra concentration that comes from older vines. The nose opens on white flowers, lemon zest and crisp orchard fruit, shading into almond, fresh pastry and a cool, chalky lift. On the palate it’s straight and finely etched rather than showy—silky texture, tightly woven citrus and stone-fruit core, and a long, saline finish that feels very Puligny. Winemaking is classical and restrained. Fruit is gently pressed, fermented for purity, and raised in oak with new barrels kept modest so the limestone speaks clearly. Lees ageing adds cream and polish without blurring the line; the result is a wine that balances tension and finesse, building weight in the glass while staying aerated and bright. Serve at 10–12 °C in white-wine stems; a brief decant can help younger bottles unfurl. Pair with simply prepared seafood (turbot, scallops, langoustine), roast chicken with tarragon, or delicate cheeses such as goat’s cheese and young Comté—the wine’s mineral spine and measured richness make it versatile at the table. Enjoy on release for purity and cut, but it rewards patience. Over three to seven years it gains hazelnut, honeyed notes and a rounder mid-palate while keeping the village’s hallmark line and length. In warmer vintages expect a touch more peach and almond; in cooler years, heightened citrus and a riper, chalk-etched acidity.
