The Hautes-Côtes de Beaune Blanc from PYCM features lovely aromas of grapefruit, lime zest, and fresh white flowers. The texture is light but crisp, and a salty minerality shines through on the palate. The grapes come from three parcels in the Hautes Côtes, named for a nearby nature preserve in Cormot-Vauchignon at over 400 metres elevation—the delayed budbreak at this cool site saved these vines from damage during the frost of 2021.
