Bollinger La Grande Année 2007 is a powerful yet exceptionally fresh and precise vintage champagne, crafted from a classic blend of 70% Pinot Noir and 30% Chardonnay sourced predominantly from Grand Cru and Premier Cru vineyards. Blend and Vinification • Grape Composition: 70% Pinot Noir (mainly from Aÿ and Verzenay) and 30% Chardonnay (from Avize, Cramant, and Oger). • Cru Selection: Around 91% to 95% of the grapes come from Grand Cru villages, with the remaining balance from Premier Cru sites. • Traditional Craft: Fermented entirely in older oak barrels (no new oak flavors imparted) and aged on its lees under natural cork rather than a crown cap for exceptional complexity and freshness. • Dosage: Low dosage at 7 grams per liter. Tasting Notes • Aroma: Opens with notes of fresh almonds, yellow peach, mango, lemon oil, and confit citrus, layered with toasted nuts, fresh pastry, and a chalky, mineral edge. • Palate: Medium to full-bodied with a vinous, silky texture. It delivers crisp apple and grapefruit acidity balanced by rich autolytic characters of brioche, honey, and spice. • Finish: Long, dry, chalky, and intensely refreshing with a lingering salty-citrus grip.
