Château-Chalon is regarded as the grand cru of vin jaune, and the 1995 vintage scored 94/100 from critics and 17/20 from La Revue du Vin de France. Made from 100% Savagnin (14% ABV), this wine was aged for over six years under a natural veil of yeast, the traditional sous voile method, developing extraordinary depth and complexity. Expect a rich, layered nose of walnut, citrus and warm spice, leading to a palate of hazelnuts, tobacco, dried fruits and curry, with a long, savoury finish. Now over 30 years old, these bottles are drinking superbly while retaining decades of life ahead, vin jaune of this calibre can age comfortably for a century.
