A rare opportunity to acquire four bottles of vin jaune from one of the Jura's most respected estates. Château-Chalon is regarded as the grand cru of vin jaune, and the 1995 vintage scored 94/100 from critics and 17/20 from La Revue du Vin de France. Made from 100% Savagnin (14% ABV), this wine was aged for over six years under a natural veil of yeast, the traditional sous voile method, developing extraordinary depth and complexity. Expect a rich, layered nose of walnut, citrus and warm spice, leading to a palate of hazelnuts, tobacco, dried fruits and curry, with a long, savoury finish. Now over 30 years old, these bottles are drinking superbly while retaining decades of life ahead, vin jaune of this calibre can age comfortably for a century. Allow two to three hours of decanting to let the wine fully open. A magnificent partner for Comté cheese, poultry in cream sauce, wild mushrooms, and lobster. Four bottles from a benchmark vintage of one of France's most singular wines.
